Natural processed Castillo, and the loudest coffee we carry. Pineapple and tamarind up front, liquorice and plum underneath, with cacao holding it all together.

Tropical, sweet and a little wild. Worth brewing when you have the time to pay attention to it — and worth skipping if you want something that behaves itself.

Provenance

Lot FSC-9178 · Castillo · natural · GrainPro-lined 35kg sack · imported by Falcon Coffees · roasted in London.

Quote that lot reference to the importer and they'll tell you the same story we're telling you.

How we'd brew it

V60: 18g dose, 300g water at 92°C, 3:00 total — go slightly cooler and slower than you think.
Aeropress: 15g dose, 230g at 90°C, 2:00.

Best within four weeks of the roast date printed on your bag.
