Giling basah — wet hulled, the way Indonesia has always done it, and the reason the green beans come out that odd jade colour. Grapefruit and orange up front, cacao and nutmeg behind, tamarind and cedar around the edges.

This is not the damp, earthy Sumatra of twenty years ago, and we are not sorry about that. If that is the cup you came for, this will disappoint you.
