The tree went in the ground three or four years before it fruited at all. The cherry took another eight months on the branch. Then it crossed an ocean, green and hard and smelling of hay.
What it tastes like for the rest of its life is decided in the next nine minutes — and about fifteen seconds of that is yours.
These are the decisions we make on the drum, at ten times the speed. The temperatures, the timings and the way it catches fire are all real.
